How to get your toddler to eat beets!

The other day at the farmers market, I noticed a vendor with multiple fresh squeezed juices. When I saw the beet juice, it was like a light bulb went off. My thoughts were that if my son drank beet juice, then he will get past the taste of beets and eventually eat beets!
I try everything to make sure that my son will like all foods. So here is what we did…
First, we gave him a mixture of beet juice, coconut water and fresh ginger. To our delight, he drank it so fast he almost quit breathin
Second, we had him try a simple version… Blended beets with water. That’s right – I stuck half of a beet into my blender and added nothing but water. He did not like that very much, so I added a tiny bit of brown sugar to sweeten it a bit. He chugged it.
Finally, we gave him just the blended beet and water and he drank it – no brown sugar needed.
Now that he tolerates the blended beet water, we can move onto actual beets. (If this works, I will update the blog). Parenting is about trial and error. Until then, I will consider half of a raw beet to be a small mommy win!
NOTE: We blend instead of juicing. This preserves all of the beneficial fiber.
